  1. Prepare quinoa according to package directions. Allow to cool slightly.
  2. In a large bowl, combine cooked quinoa, cucumber, bell pepper, red onion, and olives.
  3. Add fresh parsley and mint to the salad.
  4. In a small bowl, whisk together lemon juice, extra virgin olive oil, salt, black pepper, and dried oregano.
  5. Pour the dressing over the salad and toss gently to combine. Taste and adjust seasonings as needed. Serve chilled.
