Mediterranean Quinoa Salad (GF, DF, Vegetarian)
A refreshing and healthy salad packed with quinoa, vegetables, and a zesty lemon vinaigrette.
Ingredients
- 1 cup Cooked Quinoa
- 1/2 cup Cucumber, diced
- 1/2 cup Bell Pepper (any color), diced
- 1/4 cup Red Onion, finely chopped
- 1/4 cup Kalamata Olives, pitted and halved
- 2 tbsp Fresh Parsley, chopped
- 1 tbsp Fresh Mint, chopped
- 2 tbsp Lemon Juice
- 1 tbsp Extra Virgin Olive Oil
- to taste Salt and Black Pepper
- 1/4 tsp Dried Oregano
Instructions
- Prepare quinoa according to package directions. Allow to cool slightly.
- In a large bowl, combine cooked quinoa, cucumber, bell pepper, red onion, and olives.
- Add fresh parsley and mint to the salad.
- In a small bowl, whisk together lemon juice, extra virgin olive oil, salt, black pepper, and dried oregano.
- Pour the dressing over the salad and toss gently to combine. Taste and adjust seasonings as needed. Serve chilled.
