  1. Heat sesame oil in a non-stick pan over medium heat.
  2. Add kimchi and gochujang (if using) and cook for 3-5 minutes until slightly caramelized and fragrant.
  3. Stir in cooked rice and gluten-free tamari (or soy sauce). Mix well, breaking up any clumps of rice.
  4. Cook for another 5-7 minutes, stirring occasionally, until the rice is heated through and slightly crispy.
  5. Stir in Maple Syrup and remove from heat.
  6. Garnish with green onions and toasted sesame seeds. Serve immediately with sliced avocado.
