Kimchi Fried Rice (Dairy-Free, Gluten-Free)
A flavourful vegetarian kimchi fried rice that's both dairy-free and gluten-free.
Ingredients
- 1 cup Cooked Rice (day-old preferred)
- 1/2 cup, chopped Kimchi (vegan, gluten-free)
- 1 tbsp Sesame Oil
- 1 tbsp Gluten-free Tamari (or Soy Sauce)
- 1/2 tbsp Maple Syrup
- 2 tbsp, chopped Green Onions
- 1/4, sliced Avocado
- 1/2 tsp (optional, adjust to taste) Gochujang (Korean Chili Paste)
- 1 tsp Toasted Sesame Seeds
Instructions
- Heat sesame oil in a non-stick pan over medium heat.
- Add kimchi and gochujang (if using) and cook for 3-5 minutes until slightly caramelized and fragrant.
- Stir in cooked rice and gluten-free tamari (or soy sauce). Mix well, breaking up any clumps of rice.
- Cook for another 5-7 minutes, stirring occasionally, until the rice is heated through and slightly crispy.
- Stir in Maple Syrup and remove from heat.
- Garnish with green onions and toasted sesame seeds. Serve immediately with sliced avocado.
