Tuscan Turkey and White Bean Soup
A hearty and healthy soup featuring lean ground turkey, white beans, and Tuscan-inspired flavors.

- Heat olive oil in a large pot over medium heat.
- Add chopped onion, carrots, and celery and cook until softened, about 5 minutes.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Stir in diced tomatoes (with juices), drained and rinsed white beans, chicken broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for at least 30 minutes, or up to an hour, to allow flavors to meld. Remove bay leaf before serving.
- Stir in fresh parsley.
- Season with salt and pepper. Serve hot.
