Tuscan Turkey and White Bean Soup

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, carrots, and celery and cook until softened, about 5 minutes.
  3. Add minced garlic and cook until fragrant, about 1 minute.
  4. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
  5. Stir in diced tomatoes (with juices), drained and rinsed white beans, chicken broth, thyme, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for at least 30 minutes, or up to an hour, to allow flavors to meld. Remove bay leaf before serving.
  7. Stir in fresh parsley.
  8. Season with salt and pepper. Serve hot.
