Mediterranean Tomato & White Bean Salad
A refreshing and healthy Mediterranean salad featuring tomatoes and white beans, perfect for a light lunch.
Ingredients
- 1 cup, chopped Tomatoes
- 1/2 cup, rinsed Canned White Beans
- 1/4 cup, diced Cucumber
- 1 tbsp, finely chopped Red Onion
- 1 tbsp Olive Oil
- 1 tbsp Lemon Juice
- 2 tbsp, chopped Fresh Parsley
- 1/4 tsp Dried Oregano
- Pinch Black Pepper
Instructions
- Combine chopped tomatoes, white beans, cucumber, and red onion in a bowl.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over the salad and toss gently.
- Garnish with fresh parsley before serving. Serve immediately.
