Simple Chickpea Salad Sandwich
A classic chickpea salad sandwich with a creamy, dairy-free dressing.
Ingredients
- 1 cup, drained and mashed Canned Chickpeas
- 2 slices Gluten-Free Bread
- 2 tbsp Dairy-Free Mayonnaise
- 1/4 cup, finely diced Celery
- 1 tbsp, finely diced Red Onion
- 1 tsp Dijon Mustard
- to taste Sea Salt & Freshly Ground Black Pepper
- 1 tsp, chopped Fresh Dill
Instructions
- In a medium bowl, combine mashed chickpeas, dairy-free mayonnaise, finely diced celery, finely diced red onion, and Dijon mustard.
- Season with sea salt, freshly ground black pepper, and chopped fresh dill.
- Stir until well combined.
- Spread chickpea salad evenly on one slice of gluten-free bread.
- Top with the other slice of bread.
- Slice in half and serve. For a more toasted option, grill the sandwich.
