  3. Add parsley and mint.
  4. In a small bowl, whisk together lemon juice, extra virgin olive oil, salt, pepper, and dried oregano.
  5. Pour dressing over the quinoa mixture and toss gently to combine. Let sit for 10 minutes to allow flavors to meld.
