Mediterranean Quinoa Salad (Vegetarian, Dairy-Free, Gluten-Free)
A refreshing salad with quinoa, vegetables, herbs, and a lemon vinaigrette.
Ingredients
- 1 cup Quinoa, cooked
- 1/2 cup Cucumber, diced
- 1/2 cup Tomatoes, diced
- 1/4 cup Red Onion, finely chopped
- 1/4 cup Kalamata Olives, pitted and halved
- 2 tbsp Fresh Parsley, chopped
- 1 tbsp Fresh Mint, chopped
- 2 tbsp Lemon Juice
- 2 tbsp Extra Virgin Olive Oil
- to taste Salt
- to taste Black Pepper
- 1/4 tsp Dried Oregano
Instructions
- Cook quinoa according to package directions. Toast quinoa in a dry pan for 3-4 minutes before cooking for a nuttier flavor.
- In a large bowl, combine cooked quinoa, cucumber, tomatoes, red onion, and olives.
- Add parsley and mint.
- In a small bowl, whisk together lemon juice, extra virgin olive oil, salt, pepper, and dried oregano.
- Pour dressing over the quinoa mixture and toss gently to combine. Let sit for 10 minutes to allow flavors to meld.
