Mediterranean Potato, Tomato, and Chickpea Salad Wrap

Ingredients
- 1/2 cup, cooked and diced Potato
- 1/2 cup, diced Tomato
- 1/2 cup, cooked Chickpeas
- 1 large Gluten-free wrap
- 2 tbsp Olive oil
- 1 tbsp Lemon juice
- 2 tbsp, chopped Fresh parsley
- 1 tbsp, chopped Fresh mint
- 1/4 tsp Garlic powder
- to taste Salt
- to taste Black pepper
Instructions
- In a bowl, combine cooked and diced potato, diced tomato, and chickpeas.
- Add olive oil, lemon juice, chopped fresh parsley, chopped fresh mint, garlic powder, salt, and black pepper. Toss gently to combine, ensuring flavors are well distributed.
- Lay a gluten-free wrap on a clean, flat surface.
- Spoon the potato, tomato, and chickpea salad evenly onto the center of the wrap.
- Fold in the sides of the wrap, then roll up tightly from the bottom to enclose the filling completely.
