  1. In a medium pot, sauté yellow onion, carrot, and celery in a little olive oil or water until softened, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Pour in low-sodium vegetable broth and diced tomatoes; bring to a gentle boil.
  4. Add rinsed cannellini beans and Italian seasoning. Season with salt and pepper to taste.
  5. Reduce heat and simmer for 20 minutes, allowing the flavors to meld.
  6. Stir in fresh basil just before serving.
  7. Serve hot. For a creamier soup, blend a portion of the soup with an immersion blender before adding basil.
