Italian White Bean & Vegetable Soup
A hearty and comforting soup packed with white beans, vegetables, and Italian herbs.
Ingredients
- 1 cup, rinsed and drained Canned Cannellini Beans
- 2 cups Low-Sodium Vegetable Broth
- 1/2 cup Diced Tomatoes
- 1/4 cup, diced Carrot
- 1/4 cup, diced Celery
- 1/4 cup, diced Yellow Onion
- 1 clove, minced Garlic
- 1 tsp Italian Seasoning
- 1 tbsp, chopped Fresh Basil
Instructions
- In a medium pot, sauté yellow onion, carrot, and celery in a little olive oil or water until softened, about 5 minutes.
- Add minced garlic and cook for another minute until fragrant.
- Pour in low-sodium vegetable broth and diced tomatoes; bring to a gentle boil.
- Add rinsed cannellini beans and Italian seasoning. Season with salt and pepper to taste.
- Reduce heat and simmer for 20 minutes, allowing the flavors to meld.
- Stir in fresh basil just before serving.
- Serve hot. For a creamier soup, blend a portion of the soup with an immersion blender before adding basil.
