Tex-Mex Chicken Bowl
A high-protein Tex-Mex chicken bowl with black beans and salsa.
Ingredients
- 4 oz (113g), cooked and shredded Boneless Skinless Chicken Breasts
- 1/2 can (270mL), rinsed Canned Black Beans
- 1/2 cup (cooked) Cooked White Rice
- 2 slices, shredded Cheddar Cheese
- 1/4 cup (135mL) Diced Tomatoes with Green Chilies
- 1/4 medium, diced Green Bell Pepper
- 1/4 medium, diced Onion
- 1/4 medium, sliced Avocado
- 1 tsp Lime Juice
Instructions
- If not already cooked, cook chicken breast and shred.
- Cook white rice according to package directions.
- In a bowl, combine cooked white rice, black beans, shredded chicken, shredded cheddar cheese, diced tomatoes with green chilies, diced green pepper, and diced onion.
- Top with sliced avocado and a squeeze of lime juice.
- Serve immediately.
