Lemon Herb Baked Cod with Asparagus
Flaky cod baked with lemon, herbs, and served with tender asparagus.

- Preheat oven to 400°F (200°C).
- Toss asparagus spears with 1 tbsp olive oil, salt, and pepper on a baking sheet.
- Roast asparagus for 10 minutes, or until tender-crisp.
- In a small bowl, mix the juice of 1 lemon, 1 tsp dried oregano, 1/2 tsp garlic powder, salt, and pepper.
- Place cod fillets on a separate baking sheet lined with parchment paper.
- Brush the lemon herb mixture evenly over the cod fillets.
- Bake the cod for 12-15 minutes, or until it flakes easily with a fork. Ensure the internal temperature reaches 145°F (63°C).
- Serve the baked cod immediately with the roasted asparagus.
- Garnish with fresh parsley and lemon wedges.
