  1. In a large bowl, mix low-sodium taco seasoning, cumin, chili powder, and smoked paprika for a more robust spice blend.
  2. Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
  3. Stir in the prepared spice blend from step 1 and add 3/4 cup water. Simmer for 15 minutes, allowing the flavors to meld. Ensure the internal temperature of the ground beef reaches 160°F (71°C).
  4. While the beef is simmering, prepare the toppings. Dice the tomatoes and bell peppers. Shred the lettuce. Mash the avocado with a squeeze of lime juice and a pinch of salt to prevent browning and enhance flavor. Chop the fresh cilantro.
  5. Warm the taco shells or tortillas according to package directions. For a better texture, lightly char the tortillas over an open flame or in a dry skillet for a few seconds per side.
  6. Set up the taco bar with the seasoned ground beef, taco shells/tortillas, shredded cheese, shredded lettuce, diced tomatoes, diced bell peppers, Greek yogurt, guacamole, salsa, fresh cilantro, and lime wedges.
  7. Let everyone assemble their own tacos, adding a squeeze of lime juice and a sprinkle of fresh cilantro to finish.
