Low-Sodium Taco Fiesta Bar
Build-your-own taco bar featuring seasoned ground beef, fresh toppings, and low-sodium options for a fun and interactive family dinner.
Ingredients
- 1.5 lb Lean Ground Beef (16-18% fat)
- 1 kit Dinner Kits
- 3 tbsp Low-Sodium Taco Seasoning
- 1 tsp Cumin
- 1 tsp Chili Powder
- 1/2 tsp Smoked Paprika
- 3 Roma Tomatoes
- 2 Mixed Bell Peppers (various colors)
- 1.5 cups Shredded Cheddar Cheese (low sodium)
- 6 cups Shredded Lettuce
- 1.5 cups Plain Greek Yogurt (full fat)
- 3 Avocado
- 1 jar Salsa
- 2 Lime
- 1/4 cup chopped Fresh Cilantro
Instructions
- In a large bowl, mix low-sodium taco seasoning, cumin, chili powder, and smoked paprika for a more robust spice blend.
- Heat a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Stir in the prepared spice blend from step 1 and add 3/4 cup water. Simmer for 15 minutes, allowing the flavors to meld. Ensure the internal temperature of the ground beef reaches 160°F (71°C).
- While the beef is simmering, prepare the toppings. Dice the tomatoes and bell peppers. Shred the lettuce. Mash the avocado with a squeeze of lime juice and a pinch of salt to prevent browning and enhance flavor. Chop the fresh cilantro.
- Warm the taco shells or tortillas according to package directions. For a better texture, lightly char the tortillas over an open flame or in a dry skillet for a few seconds per side.
- Set up the taco bar with the seasoned ground beef, taco shells/tortillas, shredded cheese, shredded lettuce, diced tomatoes, diced bell peppers, Greek yogurt, guacamole, salsa, fresh cilantro, and lime wedges.
- Let everyone assemble their own tacos, adding a squeeze of lime juice and a sprinkle of fresh cilantro to finish.
