Mediterranean Pasta with Feta & Olives
A light and flavorful pasta dish with Mediterranean flavors like feta cheese, olives, and sun-dried tomatoes.
Ingredients
- 200g Pasta
- 100g Feta Cheese
- 1/2 cup, pitted and halved Kalamata Olives
- 1/4 cup, oil-packed, drained Sun-dried Tomatoes
- 2 cloves, minced Garlic
- 2 tbsp Olive Oil
- 2 tbsp, chopped Fresh Basil
- 1 tbsp Lemon Juice
- Pinch, to taste Red Pepper Flakes
Instructions
- Cook pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
- While pasta is cooking, heat olive oil in a large pan over medium heat.
- Add garlic and red pepper flakes and cook until fragrant, about 30 seconds. Be careful not to burn the garlic.
- Add sun-dried tomatoes and olives. Cook for 2 minutes.
- Drain pasta and add it to the pan with the vegetables. Add a splash of the reserved pasta water to help create a light sauce.
- Add feta cheese, basil, and lemon juice. Toss gently to combine, adding more pasta water if needed to reach desired consistency.
- Serve immediately. Taste and adjust seasoning as needed.
