Mediterranean Pasta with Feta & Olives

  1. Cook pasta according to package directions until al dente. Reserve about 1/2 cup of pasta water before draining.
  2. While pasta is cooking, heat olive oil in a large pan over medium heat.
  3. Add garlic and red pepper flakes and cook until fragrant, about 30 seconds. Be careful not to burn the garlic.
  4. Add sun-dried tomatoes and olives. Cook for 2 minutes.
  5. Drain pasta and add it to the pan with the vegetables. Add a splash of the reserved pasta water to help create a light sauce.
  6. Add feta cheese, basil, and lemon juice. Toss gently to combine, adding more pasta water if needed to reach desired consistency.
  7. Serve immediately. Taste and adjust seasoning as needed.
