Mediterranean Quinoa Salad
A refreshing and nutritious salad with quinoa, vegetables, chickpeas, and a lemon-herb dressing.
Ingredients
- 1/2 cup Quinoa
- 1/2 cup Chickpeas, drained and rinsed
- 1/2 cup Cucumber, diced
- 1/2 cup Cherry Tomatoes, halved
- 1/4 cup Red Onion, finely chopped
- 2 tbsp Fresh Parsley, chopped
- 1 tbsp Fresh Mint, chopped
- 2 tbsp Lemon Juice
- 2 tbsp Extra Virgin Olive Oil
- to taste Salt
- to taste Freshly Ground Black Pepper
- 1/4 cup Kalamata Olives, pitted and halved (optional)
Instructions
- Cook quinoa according to package directions. Let cool slightly.
- In a large bowl, combine cooked quinoa, chickpeas, cucumber, tomatoes, red onion, parsley, and mint.
- In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
- Pour dressing over the salad and toss gently to combine. Add Kalamata olives if desired.
- Let salad sit for 10-15 minutes to allow flavors to meld before serving.
