  1. Cook quinoa according to package directions. Let cool slightly.
  2. In a large bowl, combine cooked quinoa, chickpeas, cucumber, tomatoes, red onion, parsley, and mint.
  3. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  4. Pour dressing over the salad and toss gently to combine. Add Kalamata olives if desired.
  5. Let salad sit for 10-15 minutes to allow flavors to meld before serving.
