American Potato & Chickpea Salad with Dairy-Free Ranch
A classic American-style potato and chickpea salad with a creamy homemade dairy-free ranch dressing.
Ingredients
- 1 medium, diced Potatoes
- 1/2 cup, rinsed and drained Chickpeas
- 1/4 cup Dairy-Free Mayonnaise
- 2 tbsp Dairy-Free Sour Cream
- 1 tsp, chopped Fresh Dill
- 1/4 tsp Garlic Powder
- 1/4 tsp Onion Powder
- 1/4 tsp Dried Parsley
- 1 tsp Lemon Juice
- to taste Salt
- to taste Black Pepper
Instructions
- Dice the potatoes and boil until tender. Drain and let cool completely.
- In a bowl, combine dairy-free mayonnaise, dairy-free sour cream, fresh dill, garlic powder, onion powder, dried parsley, lemon juice, salt, and black pepper. Mix well to create the dairy-free ranch dressing. Adjust seasonings to taste.
- In a separate bowl, gently combine the cooled potatoes and chickpeas.
- Pour the dairy-free ranch dressing over the potato and chickpea mixture. Toss gently to combine, ensuring not to mash the potatoes.
- Chill for at least 30 minutes before serving to allow the flavors to meld.
