Bacon & Bell Pepper Carbonara with Spinach

  1. Cook spaghetti in a large pot of salted boiling water according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add diced bacon and cook until crispy. Remove bacon from skillet and set aside, reserving rendered bacon fat in the skillet.
  4. Add minced garlic and sliced bell peppers to the skillet with the bacon fat and cook until softened, about 5 minutes. Be careful not to burn the garlic.
  5. Stir in roughly chopped spinach and cook until wilted, about 2 minutes.
  6. In a bowl, whisk together eggs, grated Parmesan cheese, a pinch of freshly grated nutmeg, salt, and freshly ground black pepper.
  7. Drain spaghetti and add it to the skillet with the bell pepper and spinach mixture. Toss to combine.
  8. Remove the skillet from the heat. Pour the egg mixture over the pasta and toss quickly and continuously to coat. The residual heat from the pasta will cook the eggs and create a creamy sauce. Add a little reserved pasta water at a time if the sauce is too thick.
  9. Crumble the cooked bacon over the pasta.
  10. Serve immediately, garnished with additional grated Parmesan cheese and freshly ground black pepper, if desired.
