Halloumi and Vegetable Skewers with Tzatziki Sauce
Grilled halloumi and colorful vegetables on skewers, served with a refreshing homemade tzatziki sauce.
Ingredients
- 1, cut into 1-inch pieces Red bell pepper
- 1 large, cut into wedges Red onions
- 1, Pkg of 5 or 6 Avocados
- 250 g, cut into 1-inch cubes Halloumi cheese
- 3 tbsp Extra virgin olive oil
- 1 1/2 tsp Dried oregano
- 1 tbsp Lemon juice
- 1 1/2 cups Tzatziki sauce
- 8 Wooden or metal skewers
- To taste Salt and freshly ground black pepper
- 1 medium, sliced into 1/2-inch thick rounds Zucchini
- 8, halved Large Mushrooms
Instructions
- If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Preheat grill to medium-high heat.
- In a large bowl, toss the bell pepper, zucchini, red onion, and mushrooms with 2 tablespoons of extra virgin olive oil, oregano, lemon juice, salt, and pepper.
- Thread the vegetables and halloumi cheese cubes onto the skewers, alternating ingredients.
- Brush the skewers lightly with the remaining extra virgin olive oil.
- Grill the skewers for 10-12 minutes, turning occasionally, until the vegetables are tender-crisp and the halloumi is golden brown and slightly softened. Watch carefully to prevent burning.
- Serve the skewers immediately with tzatziki sauce for dipping.
