  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Preheat grill to medium-high heat.
  3. In a large bowl, toss the bell pepper, zucchini, red onion, and mushrooms with 2 tablespoons of extra virgin olive oil, oregano, lemon juice, salt, and pepper.
  4. Thread the vegetables and halloumi cheese cubes onto the skewers, alternating ingredients.
  5. Brush the skewers lightly with the remaining extra virgin olive oil.
  6. Grill the skewers for 10-12 minutes, turning occasionally, until the vegetables are tender-crisp and the halloumi is golden brown and slightly softened. Watch carefully to prevent burning.
  7. Serve the skewers immediately with tzatziki sauce for dipping.
