  1. Boil potatoes until tender but still firm. Overcooking will make them mushy. Cube while still warm.
  2. Dice tomatoes into bite-sized pieces.
  3. Thinly slice red onion. Soaking it in cold water for 10 minutes can reduce its sharpness.
  4. In a bowl, combine potatoes, tomatoes, red onion, Kalamata olives, olive oil, red wine vinegar, basil, salt, and pepper.
  5. Mix gently to combine. Allow the salad to sit for at least 15 minutes to allow the flavors to meld before serving cold.
