Italian Tomato & Potato Salad
A refreshing dairy-free, gluten-free Italian-inspired salad with tomatoes, potatoes, and a vibrant dressing.
Ingredients
- 2 medium Tomatoes
- 1 large Potato
- 2 tbsp Extra virgin olive oil
- 1 tbsp Red wine vinegar
- 1/4 cup chopped Fresh basil
- to taste Salt
- to taste Black pepper
- 1/4 small, thinly sliced Red onion
- 1 tbsp, pitted and halved Kalamata olives
Instructions
- Boil potatoes until tender but still firm. Overcooking will make them mushy. Cube while still warm.
- Dice tomatoes into bite-sized pieces.
- Thinly slice red onion. Soaking it in cold water for 10 minutes can reduce its sharpness.
- In a bowl, combine potatoes, tomatoes, red onion, Kalamata olives, olive oil, red wine vinegar, basil, salt, and pepper.
- Mix gently to combine. Allow the salad to sit for at least 15 minutes to allow the flavors to meld before serving cold.
