Spicy Lentil and Vegetable Soup
A hearty and flavorful lentil and vegetable soup simmered with Indian spices.
Ingredients
- 1 cup dried Lentils
- 1 cup mixed, chopped Vegetables
- 4 cups Broth
- 2 cloves, minced Garlic
- 1 tsp each Seasonings (Garam Masala, Turmeric)
- 1 medium, finely chopped Onion
- 1 inch piece, grated Ginger
- 1/2 tsp Cumin Seeds
Instructions
- Rinse lentils thoroughly under cold water.
- Sauté cumin seeds until fragrant.
- Add minced garlic and grated ginger and sauté until fragrant and light golden.
- Add finely chopped onion and sauté until golden brown.
- Add garam masala and turmeric powder, and sauté for about 1 minute to allow the spices to release their aromas.
- Add the rinsed lentils, mixed vegetables, and broth. Stir well to combine all the ingredients.
- Bring the soup to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 25-30 minutes, or until the lentils are tender and the vegetables are cooked through.
- Once the soup is cooked, you can use an immersion blender to partially blend it for a creamier texture, if desired.
- Serve the lentil and vegetable soup hot.
