Spicy Lentil and Vegetable Soup

  1. Rinse lentils thoroughly under cold water.
  2. Sauté cumin seeds until fragrant.
  3. Add minced garlic and grated ginger and sauté until fragrant and light golden.
  4. Add finely chopped onion and sauté until golden brown.
  5. Add garam masala and turmeric powder, and sauté for about 1 minute to allow the spices to release their aromas.
  6. Add the rinsed lentils, mixed vegetables, and broth. Stir well to combine all the ingredients.
  7. Bring the soup to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 25-30 minutes, or until the lentils are tender and the vegetables are cooked through.
  8. Once the soup is cooked, you can use an immersion blender to partially blend it for a creamier texture, if desired.
  9. Serve the lentil and vegetable soup hot.
