Gluten-Free Pasta Salad with Pesto and Cherry Tomatoes

Ingredients
- 1 cup Gluten-free pasta
- 1/2 cup Cherry tomatoes
- 2 tbsp Dairy-free Pesto
- 1 tbsp Olive oil
- 1 tsp Balsamic glaze
- to taste Salt
- to taste Black Pepper
Instructions
- Cook gluten-free pasta according to package instructions. Be careful not to overcook it; it should be al dente.
- Drain pasta immediately and rinse thoroughly with cold water to stop the cooking process. This prevents the pasta from becoming mushy.
- Halve or quarter cherry tomatoes, depending on their size.
- In a bowl, combine cooked and cooled pasta, halved cherry tomatoes, dairy-free pesto, olive oil, salt, and pepper. Toss gently to combine. Taste and adjust seasonings as needed.
- Drizzle a touch of balsamic glaze over the salad just before serving for added sweetness and depth of flavor. Alternatively, add a sprinkle of toasted pine nuts (ensure they are gluten-free and dairy-free) for added texture and flavor.
