Korean-Inspired Tomato & Potato Stir-Fry
Quick and flavorful Korean-inspired stir-fry with tomatoes, potatoes, and a touch of honey.
Ingredients
- 1 medium, Yukon Gold or similar Potatoes
- 1 medium, Roma or on-the-vine Tomatoes
- 2 tbsp, low-sodium Soya sauce
- 1 tsp, local if possible Honey
- 1 tbsp, toasted Sesame oil
- 1 clove, minced Garlic
- 1/2 tsp grated, fresh Ginger
- 1/2 tsp Gochujang (Korean Chili Paste)
- 1 tsp Sesame seeds
Instructions
- Wash and dice the potatoes into 1/2-inch cubes. Dice the tomatoes.
- Mince garlic and grate ginger.
- Heat sesame oil in a wok or large pan over medium-high heat. Add garlic and ginger, and sauté for about 30 seconds until fragrant.
- Add potatoes and cook, stirring occasionally, until slightly tender and lightly browned, about 8-10 minutes.
- Add tomatoes, soya sauce, and gochujang. Stir well to combine.
- Stir in honey and cook until the sauce thickens slightly, about 2-3 minutes. Ensure the potatoes are cooked through.
- Garnish with sesame seeds before serving hot.
