  1. Wash and dice the potatoes into 1/2-inch cubes. Dice the tomatoes.
  2. Mince garlic and grate ginger.
  3. Heat sesame oil in a wok or large pan over medium-high heat. Add garlic and ginger, and sauté for about 30 seconds until fragrant.
  4. Add potatoes and cook, stirring occasionally, until slightly tender and lightly browned, about 8-10 minutes.
  5. Add tomatoes, soya sauce, and gochujang. Stir well to combine.
  6. Stir in honey and cook until the sauce thickens slightly, about 2-3 minutes. Ensure the potatoes are cooked through.
  7. Garnish with sesame seeds before serving hot.
