Mexican Zucchini Boats with Ground Turkey
Low-carb zucchini boats filled with seasoned ground turkey and topped with a sprinkle of cheese for a flavorful Mexican-inspired lunch.
Ingredients
- 2 large Zucchini
- 1 lb Ground Turkey
- 1/2 cup diced Yellow Onion
- 1 (14.5 oz) can, no salt added Diced Tomatoes
- 2 tbsp Chili Powder
- 1 tsp Cumin
- 1/2 tsp Smoked Paprika
- 1/2 cup Shredded Cheddar Cheese
- 2 tbsp chopped Fresh Cilantro
- 1 diced Avocado
Instructions
- Preheat oven to 375°F (190°C).
- Cut zucchini in half lengthwise and scoop out the insides, leaving a 1/4-inch border. Reserve scooped zucchini.
- Dice the reserved zucchini. In a skillet, brown ground turkey with diced onion and zucchini until cooked through. Drain any excess fat.
- Stir in diced tomatoes, chili powder, cumin, and smoked paprika. Simmer for 5 minutes to develop flavors.
- Fill zucchini boats with the ground turkey mixture.
- Place zucchini boats in a baking dish and bake for 25 minutes.
- Sprinkle with shredded cheddar cheese and bake for another 5 minutes, or until cheese is melted.
- Top with fresh cilantro and diced avocado before serving.
