  2. Cut zucchini in half lengthwise and scoop out the insides, leaving a 1/4-inch border. Reserve scooped zucchini.
  3. Dice the reserved zucchini. In a skillet, brown ground turkey with diced onion and zucchini until cooked through. Drain any excess fat.
  4. Stir in diced tomatoes, chili powder, cumin, and smoked paprika. Simmer for 5 minutes to develop flavors.
  5. Fill zucchini boats with the ground turkey mixture.
  6. Place zucchini boats in a baking dish and bake for 25 minutes.
  7. Sprinkle with shredded cheddar cheese and bake for another 5 minutes, or until cheese is melted.
  8. Top with fresh cilantro and diced avocado before serving.
