Italian Chickpea Pasta Salad (GF, DF, Vegetarian)
A hearty Italian-inspired salad with gluten-free pasta, chickpeas, and a flavorful vinaigrette.
Ingredients
- 1 cup Gluten-Free Rotini Pasta
- 1/2 cup Chickpeas, rinsed and drained
- 1/4 cup Sun-Dried Tomatoes, oil-packed, drained and chopped
- 2 tbsp Fresh Basil, chopped
- 2 tbsp Dairy-Free Pesto
- to taste Salt and Black Pepper
- pinch Red Pepper Flakes (optional)
Instructions
- Cook gluten-free pasta according to package directions until al dente. Rinse under cold water to stop cooking.
- In a bowl, combine cooked pasta, chickpeas, chopped sun-dried tomatoes, and fresh basil.
- Add dairy-free pesto and toss gently to coat.
- Season with salt, black pepper, and a pinch of red pepper flakes (if using) to taste. Serve chilled.
