Mediterranean Tomato & Potato Salad
A refreshing salad combining tomatoes and potatoes with Mediterranean flavors, enhanced with oregano and a more robust dressing.
Ingredients
- 1 medium, boiled until tender and cubed Potatoes
- 1 medium, diced Tomatoes
- 3 tbsp Extra virgin olive oil
- 1.5 tbsp Lemon juice
- 1/4 cup, pitted and halved Kalamata olives
- 1/4 medium, thinly sliced Red onion
- 1 tbsp chopped Fresh parsley
- 1/2 tsp Dried oregano
- to taste Salt
- to taste Black pepper
Instructions
- Boil the potatoes until tender, then dice them into bite-sized pieces.
- Dice the tomatoes and red onion.
- In a bowl, combine the potatoes, tomatoes, red onion, and Kalamata olives.
- In a separate small bowl, whisk together extra virgin olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Let the salad sit for at least 10 minutes to allow the flavors to meld.
- Garnish with fresh parsley before serving.
