Aloo Gobi Masala with Green Pepper
A dry Indian curry featuring potatoes, cauliflower, and green pepper, cooked with aromatic spices for a flavorful dinner.
Ingredients
- 2 medium, cubed Potatoes
- 1/2 medium head, cut into florets Cauliflower
- 1 medium, chopped Green Pepper
- 1 medium, finely chopped Onion
- 1 tbsp Ginger-Garlic Paste
- 1/2 tsp Turmeric Powder
- 1 tsp Cumin Powder
- 1 tsp Coriander Powder
- 1/2 tsp Garam Masala
- 1/4 tsp Amchur (Dry Mango Powder)
- 1 tsp, crushed Kasuri Methi (Dried Fenugreek Leaves)
- to taste Salt
- 2 tbsp Vegetable Oil
- 2 tbsp, chopped Cilantro
Instructions
- Heat oil in a heavy-bottomed pan or wok. Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute until fragrant.
- Add turmeric powder, cumin powder, and coriander powder. Sauté for another minute, stirring constantly to prevent burning.
- Add potatoes and cauliflower. Mix well, ensuring the vegetables are coated with the spice mixture. Cook for 5 minutes, stirring occasionally.
- Add chopped green pepper, salt, garam masala, amchur (dry mango powder), and crushed kasuri methi (dried fenugreek leaves). Mix well.
- Cover and cook for 15-20 minutes, or until the potatoes and cauliflower are tender, stirring occasionally to prevent sticking.
- Garnish with chopped cilantro and serve hot with roti or rice.
