Aloo Gobi Masala with Green Pepper

  1. Heat oil in a heavy-bottomed pan or wok. Add chopped onions and sauté until golden brown.
  2. Add ginger-garlic paste and sauté for a minute until fragrant.
  3. Add turmeric powder, cumin powder, and coriander powder. Sauté for another minute, stirring constantly to prevent burning.
  4. Add potatoes and cauliflower. Mix well, ensuring the vegetables are coated with the spice mixture. Cook for 5 minutes, stirring occasionally.
  5. Add chopped green pepper, salt, garam masala, amchur (dry mango powder), and crushed kasuri methi (dried fenugreek leaves). Mix well.
  6. Cover and cook for 15-20 minutes, or until the potatoes and cauliflower are tender, stirring occasionally to prevent sticking.
  7. Garnish with chopped cilantro and serve hot with roti or rice.
