  1. Heat oil or ghee in a pan. Add finely chopped onions and sauté until golden brown.
  2. Add grated ginger and minced garlic. Sauté for a minute until fragrant.
  3. Add finely chopped tomato and sauté until it softens.
  4. Add cauliflower florets and cubed potatoes. Sauté for 8-10 minutes until they are lightly browned.
  5. Add turmeric powder, garam masala, red chili powder, cumin powder, amchur, and salt. Mix well, ensuring the vegetables are coated with the spices.
  6. Cover and cook for 15-20 minutes, or until the vegetables are tender. Stir occasionally to prevent sticking.
  7. Garnish with chopped cilantro before serving.
  8. Serve hot with roti.
