- Heat oil or ghee in a pan. Add finely chopped onions and sauté until golden brown.
- Add grated ginger and minced garlic. Sauté for a minute until fragrant.
- Add finely chopped tomato and sauté until it softens.
- Add cauliflower florets and cubed potatoes. Sauté for 8-10 minutes until they are lightly browned.
- Add turmeric powder, garam masala, red chili powder, cumin powder, amchur, and salt. Mix well, ensuring the vegetables are coated with the spices.
- Cover and cook for 15-20 minutes, or until the vegetables are tender. Stir occasionally to prevent sticking.
- Garnish with chopped cilantro before serving.
- Serve hot with roti.
