Spinach, Bell Pepper, and Paneer Stir-Fry with Rice
A flavorful and protein-rich vegetarian stir-fry with paneer, spinach, and bell peppers.
Ingredients
- 2 cups, chopped Spinach
- 1 cup, diced Mini Bell Peppers
- 200g, cubed Paneer
- 1, chopped Onion
- 2 cloves, minced Garlic
- 1 tsp, grated Ginger
- 2 tbsp Soy Sauce
- 1 tbsp Sesame Oil
- 1 cup Rice
- 1 tsp Chili Garlic Sauce
- 1 tsp Cornstarch
Instructions
- Cook rice according to package directions.
- In a small bowl, toss the cubed paneer with cornstarch to lightly coat. This will help it crisp up when stir-fried.
- Heat sesame oil in a large skillet or wok over medium-high heat.
- Add the coated paneer and stir-fry until golden brown on all sides. Remove from the skillet and set aside.
- Add chopped onion, minced garlic, and grated ginger to the skillet and stir-fry until fragrant and the onion is translucent (about 2 minutes).
- Add diced bell peppers and cook until slightly tender (about 3-5 minutes).
- Add chopped spinach and stir-fry until wilted (about 1-2 minutes).
- Return the stir-fried paneer to the skillet.
- Pour soy sauce and chili garlic sauce over the mixture and stir-fry until everything is well combined and heated through. Adjust seasoning to taste.
- Serve hot with rice. Garnish with sesame seeds or chopped green onions for added flavor and presentation.
