Cauliflower Hash with Italian Sausage and Peppers
A low-carb breakfast skillet with crumbled Italian sausage, bell peppers, onions, and cauliflower rice, seasoned with Italian herbs and a touch of garlic.
Ingredients
- 375 g Breakfast or Dinner Pork Sausage
- 1/2 Green Peppers
- 1/2 medium Onion
- 400 g Cauliflower Rice
- 1 tbsp Olive Oil
- 1 tsp Italian Herbs
- 2 cloves Garlic
- 1/4 tsp Red Pepper Flakes
- 2 tbsp chopped Fresh Parsley
Instructions
- Dice the bell peppers and onions. Mince the garlic.
- If sausage is in link form, remove the sausage from the casing and crumble.
- Heat olive oil in a large skillet over medium heat.
- Add sausage and cook until browned, breaking it apart with a spoon. Ensure sausage reaches an internal temperature of 160°F (71°C) for food safety.
- Add bell peppers and onions to the skillet and cook until softened, about 5 minutes.
- Stir in cauliflower rice and garlic. Cook until cauliflower is tender and slightly browned, about 7-10 minutes.
- Season with Italian herbs and red pepper flakes.
- Stir in fresh parsley just before serving for added flavor and freshness. Serve hot.
