  1. Cook the basmati rice according to package instructions.
  2. Press tofu to remove excess water, then cube.
  3. Create a ginger-garlic paste. Sauté in vegetable oil until fragrant.
  4. Add diced tomatoes, garam masala, turmeric powder, and chili powder. Cook for 5 minutes, stirring occasionally.
  5. Add spinach and tofu. Cook until spinach is wilted and tofu is heated through.
  6. Serve hot over basmati rice. A dollop of yogurt can add richness.
