Spinach and Tofu Curry with Basmati Rice
Creamy spinach curry with protein packed tofu, enriched with ginger-garlic paste and served with fragrant basmati rice.
Ingredients
- 1 bunch Bunched Spinach
- 200g Firm Tofu
- 1 can Diced Tomatoes
- 2 cloves Garlic
- 1 cup Basmati Rice
- 1 tsp Garam Masala
- 1 inch Ginger
- 1 tbsp Vegetable Oil
- 1/4 tsp Turmeric Powder
- 1/4 tsp Chili Powder
Instructions
- Cook the basmati rice according to package instructions.
- Press tofu to remove excess water, then cube.
- Create a ginger-garlic paste. Sauté in vegetable oil until fragrant.
- Add diced tomatoes, garam masala, turmeric powder, and chili powder. Cook for 5 minutes, stirring occasionally.
- Add spinach and tofu. Cook until spinach is wilted and tofu is heated through.
- Serve hot over basmati rice. A dollop of yogurt can add richness.
