Beef & Egg Scramble Breakfast Tacos
A high-protein, low-sodium breakfast featuring seasoned ground beef and scrambled eggs in warm tortillas, customizable with various toppings.
Ingredients
- 1 lb Ground Beef
- 5 large Eggs
- 2 tbsp Low-Sodium Taco Seasoning
- 5 Tortillas
- 1 cup Shredded Lettuce
- 1 cup Diced Tomatoes
- 1 diced (optional) Avocado
- To taste (optional) Hot Sauce (Low Sodium)
Instructions
- In a large skillet, brown the ground beef over medium-high heat. Drain any excess fat.
- Add the low-sodium taco seasoning to the ground beef and cook for another 2-3 minutes, stirring occasionally.
- In a separate bowl, whisk the eggs and season with black pepper and a pinch of cumin.
- Pour the eggs into the skillet with the ground beef and scramble until cooked through.
- Warm the tortillas according to package instructions, either in a dry skillet or microwave.
- Fill each tortilla with the beef and egg mixture, shredded lettuce, and diced tomatoes. Top with avocado and low-sodium hot sauce if desired.
- Serve immediately and enjoy!
