A creamy and tangy potato salad with chickpeas, celery, red onion, and a homemade dairy-free dressing.
Ingredients
- 1 medium, diced Potatoes
- 1/2 cup, cooked Chickpeas
- 2 tbsp Mayonnaise
- 1/4 cup, diced Celery
- 2 tbsp, diced Red onion
- 1 tsp Dijon mustard
- 1 tsp Apple cider vinegar
- Pinch Salt
- Pinch Black Pepper
Instructions
- Boil potatoes until tender, about 15-20 minutes. Cool and dice.
- In a bowl, combine diced potatoes, chickpeas, celery, and red onion.
- In a separate bowl, whisk together mayonnaise, Dijon mustard, and apple cider vinegar. Season with salt and pepper.
- Pour dressing over potato mixture and mix gently to combine. Serve chilled.
