Gourmet Pulled Pork Tacos with Spicy Mango Salsa and Chipotle Crema

  1. Rub pork tenderloin with olive oil, minced garlic, chili powder, cumin, brown sugar, salt, and pepper. Marinate for at least 30 minutes. The brown sugar helps caramelize the pork during cooking, adding depth of flavor.
  2. Sear the pork tenderloin on all sides in a hot skillet over medium-high heat. This step adds a caramelized crust, enhancing the pork's flavour and texture. Transfer the seared pork to the slow cooker.
  3. In a small bowl, combine BBQ sauce and minced chipotle peppers. Pour over the pork in the slow cooker, adding 1 tbsp of the adobo sauce for added heat. Cook on low for 6-8 hours or on high for 3-4 hours, or until the pork is easily shredded with a fork.
  4. While the pork is cooking, prepare the spicy mango salsa. In a medium bowl, combine diced mango, finely diced red onion, minced jalapeno, chopped cilantro, and lime juice. Mix well. Adjust seasoning to taste.
  5. Also, prepare the chipotle crema by blending sour cream with 1 minced chipotle pepper and a squeeze of lime juice. Set aside.
  6. Once the pork is cooked, remove it from the slow cooker and shred it with two forks. Reserve some of the cooking liquid to maintain moisture.
  7. Warm the corn tortillas in a dry skillet or over an open flame until pliable and slightly charred.
  8. Assemble the tacos by filling each tortilla with the pulled pork. Top with spicy mango salsa and a drizzle of chipotle crema.
  9. Serve immediately. Offer additional toppings such as pickled onions, crumbled cotija cheese, or avocado slices for customization. A side of Mexican rice and black beans completes the meal.
