  1. In a bowl, combine lemon juice, olive oil, dried herbs, garlic powder, paprika, salt, and pepper to create the marinade.
  2. Thread diced chicken, sliced mini cucumbers, red onion, and bell pepper onto skewers.
  3. Brush the skewers generously with the lemon-herb marinade. Let marinate for at least 15 minutes for enhanced flavor.
  4. Grill the skewers over medium heat for 15 minutes, turning occasionally, until chicken is cooked through (internal temperature of 165°F/74°C) and vegetables are tender.
