Chicken and Veggie Skewers
Grilled chicken and assorted vegetable skewers, brushed with a lemon-herb marinade.
Ingredients
- 2 medium diced Chicken Breast
- 1/2 cup sliced Mini Cucumbers
- 1/2 cup diced Red Onion
- 1/2 cup diced Bell Pepper
- 2 tbsp Lemon Juice
- 2 tbsp Olive Oil
- 1 tsp Dried Herbs (Italian mix)
- 1/2 tsp Garlic Powder
- 1/4 tsp Paprika
- to taste Salt
- to taste Pepper
Instructions
- In a bowl, combine lemon juice, olive oil, dried herbs, garlic powder, paprika, salt, and pepper to create the marinade.
- Thread diced chicken, sliced mini cucumbers, red onion, and bell pepper onto skewers.
- Brush the skewers generously with the lemon-herb marinade. Let marinate for at least 15 minutes for enhanced flavor.
- Grill the skewers over medium heat for 15 minutes, turning occasionally, until chicken is cooked through (internal temperature of 165°F/74°C) and vegetables are tender.
