Tex-Mex Tuna Salad Stuffed Avocados
Tuna salad with corn, salsa, and avocado, seasoned with chili powder and lime.
Ingredients
- 2 cans drained Tuna in Water
- 2 Hass Avocado
- 1/2 cup Salsa
- 1/2 cup canned Corn
- 1/2 tsp Chili Powder
- 1/4 tsp Cumin
- 1 tbsp Lime Juice
- 1/4 cup finely diced Red Onion
- to taste Salt
- to taste Pepper
Instructions
- In a bowl, combine drained tuna, corn, salsa, finely diced red onion, chili powder, cumin, lime juice, salt, and pepper.
- Cut avocados in half and remove the pits.
- Fill each avocado half generously with the tuna salad mixture.
- Serve immediately with a sprinkle of fresh cilantro if desired.
