Ingredients
- 1 Boneless Skinless Chicken Breasts
- 0.5 Green Bell Pepper
- 0.25 Onion
- 0.25 cup Chicken Broth
- 0.5 package Rice Sidekicks
- 1 tsp Hot Sauce
- 0.25 Avocado
- 1 tbsp Lime Juice
- 1 tsp Chili Powder
- 0.5 tsp Cumin
Instructions
- Slice chicken breasts into thin strips and season with chili powder, cumin, salt, and pepper.
- Slice onion and bell pepper into strips.
- Heat oil in a skillet over medium-high heat.
- Add chicken and cook until browned and cooked through. Ensure internal temperature reaches 165°F (74°C).
- Add onions and bell peppers and cook until softened.
- Prepare Rice Sidekicks according to package directions using chicken broth instead of water for extra flavor.
- In a bowl, combine cooked rice, chicken, and vegetable mixture.
- Top with avocado, hot sauce, and a squeeze of lime juice.
