Black Bean & Corn Salad with Avocado Lime Dressing
A refreshing and protein-packed salad with black beans, corn, and a creamy avocado-lime dressing.
Ingredients
- 1/2 cup Black beans
- 1/2 cup Corn
- 1/4 cup Red onion
- 2 tbsp Cilantro
- 1/2 Avocado
- 1/2 Lime
- 1 tbsp Olive oil
- 1/4 tsp Cumin
- 1/8 tsp Chili Powder
- to taste Salt
- to taste Black Pepper
Instructions
- Rinse and drain black beans. If using canned corn, drain it as well. For enhanced flavor, lightly grill or pan-fry the corn before adding it to the salad.
- Combine black beans, corn, finely diced red onion, and chopped cilantro in a bowl.
- In a small blender or food processor, combine avocado, lime juice, olive oil, cumin, chili powder, salt, and pepper. Blend until smooth and creamy.
- Taste and adjust seasonings as needed. Add a pinch of salt or a squeeze of lime to brighten the flavors.
- Pour avocado-lime dressing over the salad and toss gently to combine. Serve immediately or chill for later.
