  1. In a bowl, combine chickpeas, diced tomatoes, cucumber, red onion, and kalamata olives.
  2. In a small skillet, heat 1 tbsp of olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Be careful not to burn.
  3. Add the sautéed garlic and the remaining olive oil to the chickpea mixture.
  4. Stir in parsley and dried oregano.
  5. In a separate small bowl, whisk together lemon juice, tahini, salt, and pepper.
  6. Pour the dressing over the chickpea mixture and toss gently to combine.
  7. Allow to marinate for at least 10 minutes before serving to allow flavors to meld.
  8. Serve chilled.
