Mediterranean Chickpea & Tomato Bowl
A flavorful Mediterranean-inspired bowl with spiced chickpeas, tomatoes, and a lemon-tahini dressing.
Ingredients
- 1 cup Chickpeas
- 1 cup Canned Diced Tomatoes
- 1/2 cup diced Cucumber
- 1/4 cup diced Red Onion
- 1/4 cup Kalamata Olives
- 2 tbsp chopped Fresh Parsley
- 2 tbsp Lemon Juice
- 2 tbsp Tahini
- 2 tbsp Olive Oil
- 1 clove, minced Garlic
- 1/2 tsp Dried Oregano
- to taste Salt
- to taste Black Pepper
Instructions
- In a bowl, combine chickpeas, diced tomatoes, cucumber, red onion, and kalamata olives.
- In a small skillet, heat 1 tbsp of olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute. Be careful not to burn.
- Add the sautéed garlic and the remaining olive oil to the chickpea mixture.
- Stir in parsley and dried oregano.
- In a separate small bowl, whisk together lemon juice, tahini, salt, and pepper.
- Pour the dressing over the chickpea mixture and toss gently to combine.
- Allow to marinate for at least 10 minutes before serving to allow flavors to meld.
- Serve chilled.
