  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook until softened (about 5 minutes).
  3. Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess fat.
  4. Stir in minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
  5. Add diced zucchini and canned diced tomatoes (no salt added).
  6. Season with dried oregano and black pepper.
  7. Bring to a simmer, then reduce heat and cook covered for 17 minutes, or until zucchini is very tender and the sauce has thickened. Stir occasionally to prevent sticking.
  8. Taste and adjust seasonings if needed.
  9. Serve hot with side salad for a complete meal.
