Italian Ground Beef & Zucchini Skillet (Low Sodium)
A quick and easy Italian-inspired skillet meal with ground beef, zucchini, and a simple tomato sauce.
Ingredients
- 300 g Ground Beef (Lean)
- 1/2 medium, diced Onion
- 1 medium, diced Zucchini
- 1 (398 mL) can Canned diced tomatoes (no salt added)
- 1 tsp Dried oregano
- 3 cloves, minced Garlic
- Pinch (optional) Red pepper flakes
- 1 tbsp Olive Oil
- Pinch Black pepper
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced onion and cook until softened (about 5 minutes).
- Add ground beef and cook until browned, breaking it up with a spoon. Drain off any excess fat.
- Stir in minced garlic and red pepper flakes (if using) and cook for 1 minute until fragrant.
- Add diced zucchini and canned diced tomatoes (no salt added).
- Season with dried oregano and black pepper.
- Bring to a simmer, then reduce heat and cook covered for 17 minutes, or until zucchini is very tender and the sauce has thickened. Stir occasionally to prevent sticking.
- Taste and adjust seasonings if needed.
- Serve hot with side salad for a complete meal.
