Salmon and Asparagus Frittata
A high-protein Italian-inspired frittata with salmon and asparagus.
Ingredients
- 1 can (142g), drained Sockeye Salmon
- 3 Large White Eggs
- 1/2 bunch (113g), chopped Asparagus
- 2 slices, chopped Cheddar Cheese
- 1/4 medium, diced Onion
- 1 tbsp Olive Oil
- 1 tsp, chopped Fresh Dill
- to taste Salt
- to taste Black Pepper
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in an oven-safe skillet over medium heat.
- Add diced onion and chopped asparagus, cook until softened.
- Flake salmon and add to the skillet.
- Whisk eggs in a bowl and season with salt, pepper, and fresh dill.
- Pour eggs over the salmon and vegetables in the skillet.
- Sprinkle chopped cheddar cheese over the top.
- Bake in the preheated oven for 15-20 minutes, or until the frittata is set and lightly golden.
- Let cool slightly before serving.
