Chickpea, Potato, and Tomato Salad with Lemon-Dill Dressing
A refreshing salad featuring chickpeas, potatoes, and tomatoes, tossed in a zesty lemon-dill dressing.
Ingredients
- 1 medium, boiled and cubed Potatoes
- 1/2 cup, cooked Chickpeas
- 1/2 cup, chopped Tomatoes
- 1/4 cup, diced Cucumber
- 2 tbsp, chopped Fresh dill
- 1.5 tbsp Lemon juice
- 2 tbsp Olive oil
- 1/4 tsp Dijon mustard
- To taste Salt
- To taste Black pepper
Instructions
- Boil and cube the potatoes until tender but firm. Avoid overcooking.
- In a bowl, combine potatoes, chickpeas, tomatoes, and cucumber.
- In a separate small bowl, whisk together lemon juice, olive oil, fresh dill, Dijon mustard, salt, and pepper.
- Pour dressing over the salad and toss gently to combine. Avoid over-mixing to keep ingredients fresh.
- Serve chilled for best flavor.
