  1. Dice the potato into small cubes.
  2. Finely chop the onion and tomato.
  3. In a pan, heat cooking oil. Add bay leaf and sauté for a few seconds.
  4. Add chopped onions and sauté until golden brown.
  5. Add ginger-garlic paste and sauté for a minute until fragrant.
  6. Stir in chopped tomatoes, turmeric powder, cumin powder, and coriander powder. Cook until tomatoes soften and oil starts to separate from the masala.
  7. Add the diced potatoes and peas, and mix well to coat with the masala.
  8. Add water to cover the vegetables and bring to a boil.
  9. Reduce heat and simmer for 20-25 minutes, or until potatoes are tender.
  10. Remove bay leaf.
  11. Sprinkle garam masala and amchur powder. Mix well.
  12. Serve hot with rice or roti.
