Aloo Matar Curry
A simple and comforting potato and peas curry with enhanced flavors.
Ingredients
- 3g Potato
- 6g Peas
- 1/2 medium Tomato
- 3g Onion
- 1/2 tsp Ginger-Garlic Paste
- 1/4 tsp Turmeric Powder
- 1/2 tsp Cumin Powder
- 1/2 tsp Coriander Powder
- 1/4 tsp Garam Masala
- 1 tbsp Cooking Oil
- 1 Bay Leaf
- Pinch Amchur (Dried Mango Powder)
Instructions
- Dice the potato into small cubes.
- Finely chop the onion and tomato.
- In a pan, heat cooking oil. Add bay leaf and sauté for a few seconds.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and sauté for a minute until fragrant.
- Stir in chopped tomatoes, turmeric powder, cumin powder, and coriander powder. Cook until tomatoes soften and oil starts to separate from the masala.
- Add the diced potatoes and peas, and mix well to coat with the masala.
- Add water to cover the vegetables and bring to a boil.
- Reduce heat and simmer for 20-25 minutes, or until potatoes are tender.
- Remove bay leaf.
- Sprinkle garam masala and amchur powder. Mix well.
- Serve hot with rice or roti.
