Tomato and Basil Soup (Low Fat)
A light and flavorful tomato soup with fresh basil.
Ingredients
- 2 cans (796 mL) Diced Tomatoes
- 2 cups Low Sodium Broth
- 2 cloves, minced Garlic
- 1/4 cup, chopped Mint
- 1 tbsp Extra Virgin Olive Oil
- to taste Salt
- to taste Black Pepper
- 1/4 cup Fresh Basil
Instructions
- Heat extra virgin olive oil in a pot.
- Sauté Garlic until fragrant.
- Add Diced Tomatoes and Low Sodium Broth.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Stir in Fresh Basil, Mint, salt, and Black Pepper. Puree with an immersion blender if desired.
- Serve hot. Garnish with a fresh basil leaf.
