Spanish Tortilla with Salad
A simple Spanish tortilla (potato omelet) served with a side salad.
Ingredients
- 2 medium Potatoes
- 4 Eggs
- 1/2 Romaine Hearts
- 2 tbsp Salad Dressing
- 2 tbsp Olive Oil
- 1/2 diced Onion
Instructions
- Peel and thinly slice potatoes and onion.
- Heat olive oil in a non-stick skillet over medium heat.
- Add potatoes and onions and cook until softened and slightly browned, about 15-20 minutes.
- In a bowl, whisk eggs and season with salt and pepper.
- Drain potatoes and onions and add them to the egg mixture.
- Return mixture to the skillet and cook over low heat until the tortilla is set, about 10-15 minutes.
- Invert the tortilla onto a plate and slide it back into the skillet to cook the other side for another 5-10 minutes until golden brown.
- Serve warm or at room temperature with a side salad dressed with salad dressing.
