Spanish Tortilla with Salad

Ingredients

Instructions

  1. Peel and thinly slice potatoes and onion.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add potatoes and onions and cook until softened and slightly browned, about 15-20 minutes.
  4. In a bowl, whisk eggs and season with salt and pepper.
  5. Drain potatoes and onions and add them to the egg mixture.
  6. Return mixture to the skillet and cook over low heat until the tortilla is set, about 10-15 minutes.
  7. Invert the tortilla onto a plate and slide it back into the skillet to cook the other side for another 5-10 minutes until golden brown.
  8. Serve warm or at room temperature with a side salad dressed with salad dressing.
