American Tomato & Potato Hash
A simple and hearty dairy-free, gluten-free hash featuring tomatoes and potatoes, elevated with smoked paprika for a deeper flavor.
Ingredients
- 1 large Potato
- 1 medium Tomatoes
- 1/4 medium Onion
- 1 tbsp Olive oil
- 1/2 tsp Smoked paprika
- 1/4 tsp Dried thyme
- to taste Salt
- to taste Black pepper
Instructions
- Dice potatoes into small, even cubes. Dicing them small ensures they cook quickly and evenly.
- Dice tomatoes and onion.
- Heat olive oil in a pan over medium heat.
- Add potatoes and onion, cook until potatoes are browned and slightly crispy, about 10-12 minutes.
- Add tomatoes, smoked paprika, and dried thyme; cook until tomatoes are softened and slightly caramelized, about 5-7 minutes.
- Season with salt and pepper to taste. Serve hot.
