  1. Dice tomatoes and potatoes into uniform sizes.
  2. In a small bowl, mix gluten-free soya sauce, honey, rice vinegar, and cornstarch. This mixture will act as a thickening glaze.
  3. Heat sesame oil in a pan or wok over medium-high heat.
  4. Add garlic and ginger, sauté for about 30 seconds until fragrant.
  5. Add potatoes, cook until lightly browned and almost tender, about 7-8 minutes.
  6. Add tomatoes, cook until they begin to soften and caramelize, about 3-5 minutes.
  7. Pour the soya sauce mixture over the vegetables. Stir-fry until the sauce thickens and coats the ingredients, about 1-2 minutes.
  8. Add a pinch of red pepper flakes for a little heat, if desired. Serve hot.
