Chinese Tomato & Potato with Soya Sauce
A savory dairy-free, gluten-free Chinese-inspired dish featuring caramelized tomatoes and potatoes with a rich soya sauce glaze.
Ingredients
- 2 medium Tomatoes
- 1 large Potato
- 3 tbsp Gluten-Free Soya sauce
- 1 tsp Honey
- 1 tsp Sesame oil
- 1 clove Garlic
- 1/2 tsp minced Ginger
- 1/2 tsp Rice vinegar
- 1/2 tsp Cornstarch
- Pinch (optional) Red pepper flakes
Instructions
- Dice tomatoes and potatoes into uniform sizes.
- In a small bowl, mix gluten-free soya sauce, honey, rice vinegar, and cornstarch. This mixture will act as a thickening glaze.
- Heat sesame oil in a pan or wok over medium-high heat.
- Add garlic and ginger, sauté for about 30 seconds until fragrant.
- Add potatoes, cook until lightly browned and almost tender, about 7-8 minutes.
- Add tomatoes, cook until they begin to soften and caramelize, about 3-5 minutes.
- Pour the soya sauce mixture over the vegetables. Stir-fry until the sauce thickens and coats the ingredients, about 1-2 minutes.
- Add a pinch of red pepper flakes for a little heat, if desired. Serve hot.
