Masala Oats and Aloo Tikki Scramble
Savory oatmeal combined with mashed aloo tikki, sauteed with Indian spices for a flavorful vegan breakfast.
Ingredients
- 2 Aloo Tikki Potato Patties
- 1 cup Rolled Oats
- 1/2 medium Onion
- 2 cloves Garlic
- 1 tsp grated Ginger
- 1 tsp each Old El Paso Seasonings (Turmeric, Cumin, Coriander)
- 2 cups Vegetable Broth
- 2 tbsp chopped Mint
- 2 tbsp chopped Mint
- 1/2 tsp Garam Masala
- 1 small, finely chopped (optional) Green Chili
- 1 tsp Lemon Juice
- 1 tbsp Oil
Instructions
- Heat oil in a pan over medium heat. Sauté chopped onion, garlic, and grated ginger until golden brown, about 3-5 minutes.
- Add green chili (if using), turmeric, cumin, coriander, and garam masala. Sauté for another minute until fragrant.
- Add vegetable broth and bring to a boil. Reduce heat and stir in rolled oats. Cook until soft and creamy, about 5-7 minutes, stirring occasionally to prevent sticking.
- While oats are cooking, lightly pan-fry or bake the aloo tikki until heated through and slightly crispy.
- Mash the cooked aloo tikki and add to the oatmeal mixture. Mix gently to combine.
- Stir in lemon juice and garnish with fresh mint before serving hot.
