Spiced Lentil Soup with Toasted Paratha
Aromatic lentil soup enriched with warm spices, paired with crisp, garlic-infused paratha.
Ingredients
- 1 cup Lentils
- 1 medium Onion
- 2 cloves Garlic
- 4 cups Vegetable Broth
- 1 tsp Cumin Powder
- 2 Paratha
- 1/2 tsp Turmeric Powder
- 1/4 tsp Chili Powder
Instructions
- Rinse lentils thoroughly under cold water.
- Dice onion and mince garlic. Sauté in a pot until softened and lightly golden.
- Add lentils, vegetable broth, cumin, turmeric powder, and chili powder. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender and the soup has thickened.
- While the soup simmers, lightly toast paratha on a pan or tawa until golden brown and crisp.
- Optionally, brush the paratha with garlic-infused oil (sauté minced garlic in oil and strain) for added flavor.
- Serve hot soup with toasted paratha. A squeeze of lemon juice can brighten the flavors.
