Spiced Lentil Soup with Toasted Paratha

  1. Rinse lentils thoroughly under cold water.
  2. Dice onion and mince garlic. Sauté in a pot until softened and lightly golden.
  3. Add lentils, vegetable broth, cumin, turmeric powder, and chili powder. Bring to a boil, then reduce heat and simmer for 20 minutes, or until lentils are tender and the soup has thickened.
  4. While the soup simmers, lightly toast paratha on a pan or tawa until golden brown and crisp.
  5. Optionally, brush the paratha with garlic-infused oil (sauté minced garlic in oil and strain) for added flavor.
  6. Serve hot soup with toasted paratha. A squeeze of lemon juice can brighten the flavors.
