Thai Ground Pork Lettuce Wraps with Lime
A quick and flavorful low-carb lunch featuring seasoned ground pork served in crisp lettuce cups with a tangy lime dressing.
Ingredients
- 500 g Ground Pork (low sodium)
- 1 medium Red Bell Pepper
- 3 stalks Green Onions
- 2 Lime
- 1 tbsp minced Fresh Ginger
- 2 cloves minced Garlic
- 1 tbsp Fish Sauce (low sodium)
- 1 tbsp Soy Sauce (low sodium)
- to taste Sriracha (optional)
- 1 head Lettuce Leaves (Romaine or Butter)
- to taste Fresh Cilantro (optional)
Instructions
- In a large skillet, brown the ground pork over medium-high heat, breaking it up with a spoon. Ensure pork reaches an internal temperature of 160°F (71°C). Drain any excess fat.
- Add diced bell pepper, minced ginger, and garlic to the skillet. Cook until the bell pepper is tender-crisp, about 3-5 minutes.
- Stir in fish sauce and soy sauce. Cook for another minute.
- Remove from heat and stir in chopped green onions.
- Add sriracha for heat (if using)
- Serve the pork mixture in lettuce cups. Squeeze fresh lime juice over each cup.
- Garnish with fresh cilantro, if desired.
