Coconut Curry with Frozen Vegetables and Coconut Milk
Ingredients
- 300g Organic Frozen Vegetables
- 400ml Organic Coconut Milk
- 150ml Organic Curry Sauce
- 1 tbsp Olive Oil
- to taste Salt and Pepper
- 1 cup Cauliflower Rice
Instructions
- Heat olive oil in a large skillet or pot over medium heat.
- Add the frozen vegetables and cook for about 5 minutes until slightly softened.
- Pour in the organic coconut milk and curry sauce, stirring well to combine.
- Season with salt and pepper to taste.
- Simmer for 10-15 minutes, allowing the sauce to thicken slightly.
- Serve over cauliflower rice.
