Italian Tuna & White Bean Salad
A protein-rich Italian salad featuring tuna, white beans, and fresh vegetables, brightened with balsamic vinegar and fresh basil.
Ingredients
- 3 cans (5oz each), drained Canned tuna in water (low sodium)
- 1 can (15oz) Canned cannellini beans (low sodium), rinsed and drained
- 1/2 cup Cucumber, diced
- 1 cup Cherry tomatoes, halved
- 1/4 cup Red onion, finely chopped
- 2 tbsp Fresh parsley, chopped
- 2 tbsp Fresh basil, chopped
- 1 tbsp Lemon juice
- 1 tbsp Balsamic vinegar
- 1 tbsp Olive oil
- 1/4 tsp Black pepper
- 1/2 tsp Dried oregano
Instructions
- In a large bowl, combine tuna, cannellini beans, cucumber, cherry tomatoes, red onion, parsley, and basil.
- In a small bowl, whisk together lemon juice, balsamic vinegar, olive oil, black pepper, and oregano.
- Pour the dressing over the tuna mixture. Mix gently to combine, being careful not to mash the beans or tuna.
- Serve immediately or chill for later. This salad can be served on its own, with whole wheat crackers, or in lettuce cups. Consider adding a side of whole-grain bread for a more substantial meal.
