Tomato & Basil Quinoa Salad with Balsamic Glaze

Ingredients
- 1/2 cup Quinoa
- 1 cup Vegetable Broth
- 1 cup, halved Cherry Tomatoes
- 1/4 cup, chopped Fresh Basil
- 1 tbsp Balsamic Glaze
- 1 tbsp Olive Oil
- 1/4 tsp Salt
- 1/8 tsp Black Pepper
- 1 clove, minced Garlic
Instructions
- Rinse the quinoa in a fine-mesh sieve.
- In a saucepan, combine the quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the broth is absorbed.
- Fluff the quinoa with a fork and let it cool slightly.
- In a bowl, combine the cooked quinoa, halved cherry tomatoes, and chopped basil.
- In a small bowl, whisk together olive oil and minced garlic.
- Drizzle the garlic infused olive oil and balsamic glaze over the quinoa mixture.
- Season with salt and pepper to taste.
- Serve warm or cold.
